臭氧水对军曹鱼片的减菌效果和品质的影响

Sterilization and quality effects of ozone water on cobia fillets

  • 摘要: 文章研究比较了不同质量浓度的臭氧水处理军曹鱼(Rachycentron canadum)鱼片对其减菌效果和品质的影响。在15 ℃条件下分别以质量浓度为4 mgL-1、5 mgL-1、6 mgL-1和7 mgL-1的流动臭氧水处理军曹鱼片,以减菌率、感官和色泽为评价指标。结果表明,质量浓度为7 mgL-1的流动臭氧水处理军曹鱼片10 min可以达到一个较好的减菌效果,减菌率达到81.12%,且该臭氧水质量浓度对军曹鱼的品质影响较小。

     

    Abstract: In order to study the sterilization and quality effects of ozone water on cobia fillets,flowing ozone waterat various concentrationsof 4 mgL-1, 5 mgL-1, 6 mgL-1 and 7 mgL-1 was experimented to screen the optimal condition at15 ℃. Comparing the effects of sterilization ratio, sensory evaluation and color difference in different groups, we find that the treatment with 7 mgL-1 flowing ozone water for 10 min on cobia filletsgets a better sterilization ratioof 81.12% without reducing the quality.
