中国贝类前处理加工技术研究进展

Research progress in shellfish pre-processing techniques in China

  • 摘要: 贝类清洗、分级、净化等前处理加工是贝类生产的重要组成部分,通过这一工艺可以大幅提升贝类品质与食用安全性。文章简要介绍了中国贝类前处理加工的现状,回顾了中国贝类前处理加工技术的研究进展,阐述了目前中国贝类加工产业链上所存在的一些问题,并提出今后的发展建议。

     

    Abstract: The shellfish pre-processing, such as cleaning, grading and depuration, etc., is important shellfish production, improving shellfish quality and food safety greatly. The paper briefly introduces the current situation of shellfish pre-processing, reviews the research progress in its techniques and expounds the existing problems as well as future development orientation in the shellfish industry of China.
