Characteristics of transglutaminase from bighead carp

  • We studied the transglutaminase (TGase) from bighead carp (Hypophthalmichthys nobilis) under different conditions (temperature, pH, DTT). The optimum temperature and pH of TGase were 37~45 ℃ and 6.5~7.5, respectively. The optimum concentrations of CaCl2 and dithiothreitol were 0~2.2 mmolL-1 and 0~0.2mmolL-1, respectively. The TGase activity decreased as concentrations of Na+ and K+ increased, and was inactivated by Mg2+, Cu2+,Zn2+, Ba2+,Fe3+,Fe2+,Pb2+ and EDTA.
